High Maintenance Mom

I'm trying another weekly menu and will be adding the recipes soon. Tonight's salad took too long to make but was enjoyable for the two minutes we had without both kids screaming...

• Sunday - Mango, Chicken, Avocado salad with orzo on the side
• Monday - Lentil and Carrot stew with spinach
• Tuesday - Quesadillas w/tomatoes and chicken
• Wednesday - Hot dogs with mixed bean salad
• Thursday - Salmon with red peppers and couscous
• Friday - Pizza night, Trader Joes pizza and spinach and feta on lavash
• Saturday - Rainbow peanut noodles
