Pumpkin bread with dates

  1. Preheat oven to 350°
  2. Grease a 9" x 5" loaf pan
  3. Whisk the sugar, pumpkin, eggs, and oil until smooth (about one minute) in a large bowl.
  4. Combine the flours, baking soda, baking powder, salt, cinnamon, cloves, and nutmeg in a medium size bowl. Add the dry ingredients to the large bowl and mix for one to two minutes.
  5. Fold in the dates using just a few strokes.
  6. Pour batter into loaf pan and bake for 60-70 minutes.
  7. Cool on a rack for 10 minutes.

    This is a sweet pumpkin bread that we enjoy for the holidays. Now that the Trader Joe pumpkin bread mix has changed, I am going back to making this bread and the cranberry bread on the cranberry bags.

    1 1/2 c. brown sugar

    1 c. pumpkin puree

    2 large eggs

    1/2 c. oil (canola or a nut oil like walnut or almond)

    1 c. whole wheat flour

    3/4 c. white flour

    1 t. baking soda

    1/2 t. baking powder

    1/2 t. salt

    1/2 t. cinnamon

    1/2 t. cloves

    1/2 t. nutmeg

    1 c. dates, coarsely chopped or raisins
