Weekly menu 16 April 06

Last week was almost comical. I lost my voice, everyone was sick, and I ended up going to the store three times during the week; that's in addition to the two trips over the weekend. We ended up having friends over on Thursday night but not Wednesday. I'm posting this week's menu a little late but it's helping me get organized for the week so I'm forcing myself to do it. I've also attached a pdf lunch checklist that includes lots of ideas for what to pack/serve...

Dinner for this week

  • Sunday - Chicken, peas, and almonds with strawberries, ice cream, and amaretti (at a friend's house - B's birthday - I recommend using this recipe but I tablespoon sized balls of dough instead of using a pastry bag. I also made my own almond paste.)
  • Monday - Wild rice stew with chicken
  • Tuesday - Peppers with goat cheese
  • Wednesday - Tomato Beef with rice
  • Thursday - Hot dogs with Corn on the cob (I'm at a Board meeting)
  • Friday - Pizza
  • Saturday - Chicken with hominy and cilantro chili

Lunches for our almost 4 year old and almost 2 year old (a loose plan). Our 4 year old has been eating large lunches so I've been packing more for him. The 2 year old often finishes parts of his lunch when we get home as I'm trying to make dinner.

  • Monday - Chicken or eggs (the four year old doesn't eat eggs very often but the almost two year old loves them), pear, green beans, yogurt, and cheese
  • Tuesday - Salami, grapes, edamame, matzo w/butter, and cheese
  • Wednesday - Soy sausages, watermelon, peas, pirate booty, and cheese
  • Thursday - Rice with tomato beef sauce, strawberries, broccoli, yogurt, and cheese
  • Friday - Raisin bread, hot dogs, corn on the cob, apples, and cheese
