Easy fancy dinner with hubby- scallops on saladPut a couple Tbs oil in pan and get it hot, med-high heat. Put scallops in non-stick pan, well spaced, until they are brown and a bit crispy on one side (this will take less than 5 minutes.) Then flip them over and after about a minute or two turn off the heat, and let the scallops finish cooking for another minute or so. Then remove the scallops and wipe the frying pan with a paper towel. Put a couple more Tbs oil in the pan and put the onions and thyme in. Cook for a few minutes until onions start to get a bit soft. Add orange pieces and vinegar and turn off heat. (You just want to get it warm). Place salad on plate, dress with orange/onion/oil/vinegar dressing, and place scallops on top. Voila! Enjoy! We made this saturday might after baby went to bed- it costs about $5-6 per person (I sprung for the fresh large scallops- totally worth the extra money), but still cheaper than eating out, and it is yummy and very fast. Great for a special treat. You can get the original recipe from America's test kitchen. I'll have to try that when I get back from Denver! I love scallops. We occasionally cook them with tomatoes and eat them with pasta.
