Buckwheat pancakesMix dry ingredients together in a small bowl. Mix everything else in a large bowl. Add the dry ingredients to the wet ingredients and mix until just moistened. The batter will be very thin. Oil or butter a hot griddle (or pan). Use a 2T spoon to make kid-sized pancakes or a 1T spoon for toddler-sized pancakes. They will be flat and will cook quickly. Serve the pancakes with maple syrup, frozen fruit, jam, peanut butter, or applesauce. My kids like maple syrup and jam so I figure they are already getting enough extra sugar. After the first plain pancake with jam, the kids ate the banana ones without anything on them. The pancakes are also great for snacks and in lunches. I made a double batch, which the four of us almost finished in one meal. N and I finished the final 6 for snack. 1/2 c. whole wheat flour 1/2 c. buckwheat flour 1 t. baking powder 1/4 c. water 1 c. milk (or soy or rice milk) 1 - 2 T. sugar depending on your taste (see note below) 1 egg 1 T. vegetable oil (canola) Extra (our favorite): 2 thinly sliced bananas |
