Four-minute plantain in the microwave

Take a yellow plantain with a few black spots. Wrap it in a paper towel (to prevent it from exploding in your microwave). Microwave for two minutes on one side, then flip and microwave for two minutes on the other side.

Open carefully. Mine have usually split open on one side. Slice and serve. I like to eat mine plain but you can put a little sugar on them to make them sweeter if you want.

A colleague at the office taught me this plantain trick.

I loved ripe plantain done this way! I would suggest though to cut both ends and to cut a fine line on to the side. To avoid the explosion.

You can also do them taking the peel off, season it with a little brown sugar and just a dash of butter, wrap it up in foil. Put in the oven. Its about a half hour per plantain. Delicious... Of course it takes longer, but if you have the time its worth it!

Plantains

I've never cooked them in the oven but that sounds great for doing more than one at a time. I've noticed that the more brown/blacks spots the plantain has, the less time it needs to cook (90 minutes per side).
