Friday night is pizza night

About a month ago as I rushed from work to daycare and then home in a panic about the time and what we would have for dinner, I realized that there had to be a better way. Friends had mentioned that they made dinners for the whole week on Sunday but it sounded difficult to organize. I decided to start slowly, making Friday night pizza night. I buy the following items every week from Trader Joes...
  • Trader Joes Margarita Pizza
  • Almost whole wheat pizza dough
  • Spinach
  • Feta (I can't eat cow's milk so any cheese could be substituted)
  • Trader Joes pizza sauce
  • Lavash
  • Plus I use corn meal, salt, and pepper.
  • When I finally start growing herbs again, I will add them too.

When I get home from work on Fridays I preheat the oven and take the dough out of the refrigerator. I put the already baked pizza in the oven and roll out the dough. I use corn meal on the bottom of the tray or stone. Then I add the sauce, a generous amount of spinach, and big chunks of feta. I find that the pizza needs to cook longer than the requested 10-15 minutes to get a hard crust. Sometimes, when I remember, I cook the rolled out dough for 5 minutes before adding the toppings.

My sons and husband start on the store bought pizza so they can have something to eat right away. We eat the leftovers for lunch on Saturday and Monday.

On days when I don't feel like rolling out the dough, I make a little pizza for myself on the lavash, which I cook in the toaster oven. After we've finished eating, I make bread sticks with the pizza dough.

Other pizza variations:

  • sauce, cheese (mozzarella, romano, chevre, ricotta), red pepper (or mushroom, artichoke, fennel, etc.)
  • sauce, cheese, sausage or meatball
  • spinach, egg, goat cheese - cook spinach in microwave for 5 minutes, add to (2 eggs, 6 oz of goat cheese, salt, pepper, and a pinch of nutmeg), pour into crust
