July is National Blueberry monthBlueberries are one of my favorite fruits and my kids too! Last weekend we had blueberry pancakes and daily we have blueberry bread made by a local farm. National blueberry month is just another great excuse to enjoy this cute little fruit. Their amazing antioxidant powers are reason enough to make them in a smoothie for your kids.... A great power breakfast smoothie includes a cup of blueberries, a cup of pineapple juice, one ripe banana, one 8oz vanilla yogurt (keep the fat in for the little ones), 2 tbsp wheat germ, 2 tbsp flax meal and a little vanilla. I use wheat germ and flax meal in my kids oatmeal every morning. Another fun way to enjoy blueberries...a blueberry pie! My Mother in Law made 2 during our recent trip to see them. They were delicious. The kids loved them too. She uses Better Homes & Garden's recipe. Finally, eat them straight. You don't have to go to any trouble to enjoy this amazing fruit. Happy July!
